EMMA HOPE THE Wicked Cheese Company is expanding and will build a new factory, tasting area and cafe-restaurant at Richmond set to open in spring. The business has been operating for four years from a small site in Moonah. Wicked Cheese owner and cheese maker Ashley McCoy said the success of the business necessitated the new facility. ''The Richmond development basically came about because we've out grown our small operation here in Moonah,'' he said. ''There's probably two main reasons. Number one is that earlier this year we won a pretty big award in Melbourne, which was the Australian Grand Dairy award for brie cheese. ''It's a great award and it really opened up our markets. As a result of that we picked up two new distributors and we have two more who want to distribute our product but we've said no because we can't supply them. ''Reason number two is that we get a lot of tourist visit us. We're basically just a shop and that's all it is. ''Out at Richmond the plan is to have a tasting area and a cafe-restaurant, and wrapping around the outside of that will be cheese-maturing rooms and the cheese- making room. They'll all be windowed and there'll be access to a walk-in cheese room. ''So when tourists come in they can see cheese being matured. We'll be making cheese five days a week, so they can see the cheese-making process.'' The Clarence Council has granted approval for the new facility and the first sod will be turned by the end of the month. Wicked Cheese specialise in white- mould cheese, though with the expanded operation they will begin producing a wider range. ''There will be a number of cheese that we'll make on a rotational basis. We want to also incoporate our cheeses into the cafe-restaurant and the dishes.'' Mr McCoy said the new premises would showcase a range of products from the Coal Valley region. ''The second part of the expansion is to bring in non-cheese items,'' he said. Products such as olive oils, dried fruit and wooden cheese boards will be on sale and incorporated into the restaurant. ''We're looking to build a synergy with local producers,'' McCoy said. Wicked stock Drew wines and will expand its supply in the new location. ''We'll get some guest wine makers out at Richmond and we'll do some wine and cheese tastings there. ''I see a lot of people in the Coal Valley who struggle to take their ideas and dreams to fruition.'' Mr McCoy has a long work history in the dairy industry, largely in project and operation management. He worked at King Island Dairy as a cheesemaker for five years. ''When I went there it was the late '80s. There was a lot of political turmoil. ''They went into receivership and I was brought in as part of the new crew to get things going again. ''We expanded the range from one white-mould cheese, to cheddars and blue cheese.'' Wicked Cheese gets all of its milk from the Coal Valley. The company uses almost 2000 litres a year. The dairy farm is just 2km from where the new facility will be built. ''Visitors will drive past our dairy herd then they'll drive into our site,'' Mr McCoy said. The get-together is family-friendly event that has something to offer peo- ple of all ages. About 2000 people attend the get-together each year, which is the association's main fundraising event. Most people camp at the event, and Ms Boon said there was always an influx of non-riding visitors on Saturday afternoon. ''Quite a few people come along to watch some of the events and enjoy the entertainment on the Saturday night and then go home Sunday morning,'' she said. Ms Boon said other or- ganisations such as the State Emergency Service, which helped out with the event, also took a share of the funds, which could help them purchase new equipment. This year's program will include a full day of horse events on Saturday, Febru- ary 5, including the pres- tigious TMCA junior and senior championships. On Sunday, riders will saddle up for the annual trial ride, which can see as many as 400 horses and riders heading out. Ms Boon said this year's ride would go for about four hours and include a lunch stop. ''All of the rides that we have are nice, but there are some which are more spec- tacular than others and this will be one of them,'' she said. ''It's a really scenic ride.'' To maintain the family- friendly atmosphere, se- curity at this year's event will be boosted and anti- social behaviour will not be tolerated.
