JENNIFER CRAWLEY 'They make the most beautiful jams COUNTRY Larder Preserves' Peter Longman sells 2000 Christ- mas cakes each year. His preserves and sauces sell like hot cakes each weekend at the Salamanca markets. He travels every year to the Deloraine Craft Fair and sells wholesale to gourmet delica- tessens Hill St Grocer and Norman and Dann. Not a chef by trade, Peter, 64, worked for the tax office before transferring his talents to the kitchen. His popular festive fruit and nut cake, chock full of fruit and nuts, is known as the 'stained glass cake'. Peter also cooks a more tra- ditional moist rich brandy cake with no nuts. He sells online to customers who buy his product from Salamanca and freights to a large contingent of loyal interstate customers. Fruit is sourced locally from the Huon Valley, Neika, Bushy Park and Hartz River. Traditional jams are made from fruits like jostaberry, gooseberry and greengages. ''They make the most beautiful jams,'' Peter said.
